Super Easy Throw Together Fruit Salad, what can be easier?

Today in Indiana, it feels like spring and that puts me in the mood for an easy throw together fruit salad, you know one that includes a bunch of fresh bananas and already prepared frozen fruit – organic if possible.

This easy throw together fruit salad uses several frozen fruits.  Of course, you can use all fresh fruits but then you’d have to clean them and it wouldn’t be quite so easy, would it?

You can use any combination you’d like but today I’m using frozen blueberries, strawberries and blackberries along with fresh bananas.

The chunky looking stuff on the right is coconut cream which you can find at the top of a can of coconut milk, full fat; of course.  You can whip it up like regular cream but if you whip too long it becomes clumpy.

What could be easier than this easy to throw together fruit salad?

Ingredients:

  • 1 small banana, peeled and sliced
  • 1/4 cup frozen blueberries
  • 1/4 cup raspberries
  • 2 dollops of coconut cream for topping
  • walnut pieces for topping

Directions:

  • Layer fruit into individual serving dishes
  • Top with coconut cream and walnut pieces
